The American Vegetarian Cookbook from the Fit for Life Kitchen edition by Marilyn Diamond Cookbooks Food Wine eBooks

I really expected the book to have similar recipes like the ones in the first book. They are mostly all meatless and dairy free meals. All dairy and meat are replaced with tofu. There are few "quick and simple" dishes, most all require a blender. I have allergies to soy (tofu) and don't know if a diet rich with tofu will agree with me. I can find most of the ingredients locally, but some are expensive and difficult to find...still trying to understand what "Stedda" and "Fruit-source" mean. Marilyn Diamond obviously did intensive research into food nutrients and human requirements, and I applaud her efforts. I just need healthy, simple meals on a low income budget.

The American Vegetarian Cookbook from the Fit for Life Kitchen edition by Marilyn Diamond Cookbooks Food Wine eBooks Reviews

This is an excellent book with a large variety of recipes. Excellent tips on stocking the pantry/freezer, what the best sources of the various vitamins are, how much protein is needed, how to replace animal products. If one could only have one vegetarian cookbook, this might be the one to have.
I have several vegetarian cookbooks on my shelf (I'm not a vegetarian) and yet over the years I haven't been moved to prepare most of the recipes -- too many ingredients or too fancy but I remembered how the Fit For Life vegetarian recipes were always good (a little bit of work but they were tasty) so I ordered this book and it is GOOD. Very good.
I bought this book as a gift. I have used this book for years. Excellent narrative and simple recipe. Could be the cornerstone of any library. Recommend without hesitation.
I was thrilled when I saw this around the sites for Marilyn Diamond's books. After getting "Fit for Life" when it came out decades ago, I really hadn't checked on any follow up books. Did I get excited to receive this encyclopedia sized volume. And it is a comprehensive book with many features. However, the entire premise of the book is contrary to its name. It is not a vegetarian cookbook. It is a vegan book, and there's a big difference. And, unfortunately, during its release era, soy products were being hailed as the end-all, and the book is full of tofu and soy alternatives. We've since learned better. So, though I know Marilyn will be edifying in many respects, I really cannot use most of this book. Another thing that often happens with vegan food is the domination of the blender and food processor, reducing everything to puddles, so to speak. There's a lot of that here - so much processing - also with many other multi-steps in preparation, just to avoid a little butter, etc. Meatless is one thing, vegan is quite another, and the title really, really misleads and misnames this book. This will not change my appreciation or use of the "Fit for Life" original book principles and its fine recipes, but I will look much more closely in the future, even with a previously proven author. Vegetables are great; funky stuff is not.
Some decent recipes in this vegetarian cookbook that don't overuse dairy or eggs as a crutch. Even so, one must pick and choose and alter them in order to create truly healthy dishes. Can't give it more than a middle of the road rating because there are far better cookbooks out there that don't require as much "tweaking" for healthy plant based diets.
My husband and I are trying to live a "Fit for Life" lifestyle, and wanted to expand our recipe repertiore, so we bought this book. This book is everything we wanted, with alot of delicious recipes for eating properly combined. The salad dressing recipes really make salads pop with flavor and are fast and easy to use.

The shepards pie is one of our favorites and we never miss having any meat in our meals. Our favorite soup is the creamy cauliflower soup. In fact if we finish a meal and still feel hungry, I just whip up a batch of the cauliflower soup for dessert.

A difference we noticed is that this book from the "Fit For Life" book is that it uses canned tomatoes instead of always using fresh, but fresh can be substituted if you are uncomfortable with having even minimally cooked tomatoes. Also, instead of using all dried herbs this book includes fresh herbs, which is great since we have an herb garden.

I would recommend this book to anyone.
It's huge. It's full of good advice. It takes you along by the hand to transition to vegetarian diet and why you want to do that. I am not a tofu person but I might even be convinced to try some of these recipes some time. It doesn't matter to me if I ever see tofu again but all the other recipes and advice are so valuable. It's all about food combining and I know first hand how important that it is to combine foods properly. No other books even consider this important. Digestion is what it's all about. If our food doesn't get digested properly, we are not happy campers. This book is a Godsend. I really appreciate Marilyn Diamond and her efforts to get all those recipes together for us. Marilyn and her husband Harvey wrote the first Fit for Life Diet books and many other helpful books, one on Pain Free living that I also have and love for how it benefitted me already. I have many of their works and think they are great. This book was a good find on , used and very reasonable and is my favorite cook book now.
